The level of binding I was thinking of was not too flatten them but too
mask the lumps, ie the pointy bits,

After all many males have moobs but we have pointy jiggly ones, so if we take the nipples away by a cover then hopefully they will just appear moobish,

I used to find that I could wear "plain Jane" white sports bras to protect my nipples working and no one would pay them any attention. The trick is to treat them as just being nothing but a minor annoyance. If anyone notices, they'll assume mild gyno and usually won't say anything because the last thing most people want is to open mouth and insert their own foot. But there are the few exceptions... one of my ex co-workers was of the variety that all he ever seemed to do was insert his own foot.

Of course, in my case, that was actually true back then... it WAS just gyno. By the time I was actively trying to enhance them I was living full-time.
